Tacos for Two

A big struggle I’ve found since going vegan is finding easy dinners to cook for me and my husband.  He is a meat-eater, and while he will eat some meatless meals, it’s  not every day.  Some nights I end up cooking two completely separate dinners, but I do try to make one dinner two ways to make cooking and clean up easier!  One of my go-to meals that is easy to customize is tacos!  I make the different fillings, and use either tortilla shells or lettuce.  Pretty easy!  While I will never turn my husband vegan, I do buy meat that is organic and humanely raised.  Check out Certified Humane for more info!  Here is a round-up of some of my favorite meatless taco recipes, and an avocado sauce that’s sure to please everyone 🙂

Meatless Taco Recipes:

 

Taco Tip:  Many taco recipes call for chipotles in adobo sauce or tomato paste, but you only use a little.  Instead of buying a new can every time, freeze the remainder in an ice cube tray and pop out just what you need each time!

 

Avocado “Sour Cream”

  • 1 cup coconut milk
  • 1 avocado
  • 4 tablespoons cilantro leaves
  • 1 jalapeno pepper, seeds removed
  • 2 garlic cloves
  • 2 tablespoons lime juice
  • 1/2 teaspoon kosher salt
  • pepper to taste

Combine all ingredients in a blender and enjoy!
